Feta, Spinach & Bacon pasta

four slices of bacon
Small glug of olive oil
6 small vine tomatoes, quartered
1 purple onion, chopped
1 stick celery, chopped small
1/2 orange pepper, chopped
100g feta, crumbled
100ml white wine
1 tsp oregano
Pinch of chilli flakes
In a deep sided frying pan, dry fry the bacon till cooked by and the pure fat are left in pan.
Take away and put aside, add the onion, pepper and celery and sauté within the bacon juices on a low to medium warmth till smooth.
Add the wine and scale back to half.
Boil some water and wilt the spinach, take away and blitz to a clean paste.
