Fridge raid and utilizing up leftover beef from yesterday’s roast, this easy pasta dish packs a punch of flavour …..
Serves 2
Leftover beef, chopped small (lamb could be excellent)
200g feta
250g romantico tomatoes
1 medium, pink onion
30g recent Basil, chopped
100ml white wine
Glug of olive oil
Black pepper
200g dried pasta of your alternative, I used penne
Merely reduce every tomato in half and add to oven roast dish, finely slice the onion and add to the tomatoes, pour over a superb glug of olive oil and season with black pepper, no salt because the feta will give the saltiness required.
Place in oven at 150’c and roast till tomatoes damaged down amd onion roasted approx 30 to 40 minutes.
Add the white wine and put again in oven for additional 5 minutes, then add the chopped meat and crumble within the feta, stir and add again to oven.
In the meantime boil water and cook dinner pasta as per directions till all dente.
Take away the tomato/ beef from the oven and stir effectively, the feta must be melted to make a sauce.
Add 1 ladle of the water from the cooked pasta amd stir, drain the pasta and add the sauce, stir by means of the basil …..
