500g Gooseberries
100g Sultanas
2 medium onions diced small
100g castor sugar
60ml wine vinegar
1 teaspoon floor ginger
1 crimson chilli diced or 1/2 teaspoon chilli flakes
Pinch of salt and pepper

Methodology
