Ingredients:

Green turmeric – 250 grams

Oil – 2 tablespoons

Raisin – ½ teaspoon

Jeera – ½ teaspoon

Hsing – pinch

Green chillies – 1–2 (chopped)

Turmeric powder – ¼ teaspoon

Chilli powder – as per taste

Coriander powder – 1 teaspoon

Salt – as per taste

Jaggery / Sugar – a little (optional)

Lemon juice – 1 teaspoon

Coriander – for garnish

Method of preparation:

Wash the green turmeric well, peel it and slice it thinly.

Heat oil in a pan and add mustard, cumin and asing.

Now add green chillies and sauté lightly.

Then add the chopped green turmeric and cover it on medium heat and cook for 8–10 minutes.

Now add salt, turmeric powder, chilli powder and coriander powder.

Once the vegetables are cooked well, add a little jaggery/sugar and lemon juice.

Sprinkle coriander on top and serve hot.

This vegetable goes very well with roti, bhakhri or paratha.
