Impressed by my MC buddy Greg G Emmerson publish of his Potaje dish the opposite day right here is my;

Chickpea, rooster and Chorizo stew

Substances
1 rooster breast, minimize into chew dimension items
2 tbls olive oil
80g cooking chorizo sausages skinned & sliced
1 massive onion, minimize into wedges
2 garlic cloves
1 tbls candy smoked paprika
2 tbsp. tomato paste
2 medium dimension potatoes, minimize into 1/2-inch chunks
2 bay leaves
500ml rooster inventory
400g chickpeas (garbanzo beans) drained
Salt and pepper to style
59g. child spinach
1tsp contemporary thyme
Methodology

Warmth the oil on medium in a big pot or saucepan. Add the rooster, chorizo and saute till frivolously browned, about 5 minutes. Take away from the pan and put aside.
Add the onion wedges, garlic, paprika to the pan, cook dinner for about 5 minutes till the wedges separate
Stir within the tomato paste and cook dinner for an additional jiffy till it evenly coats the onions and garlic.
Add the potatoes, bay leaves, thyme leaves and inventory and simmer the whole lot till the potatoes are simply tender.
Add the chickpeas, rooster and chorizo and cook dinner for an additional 5 minutes. Season with salt and pepper.
On the final second, take away the bay leaves, stir within the spinach, and cook dinner till the spinach wilts.

Serve with a bread of your option to dunk and take in the sauce.
