Strawberry and Rhubarb lattice pie

Utilizing store purchased pastry is ideal for this easy to recipe
Substances

1 store purchased roll of shortcrust pastry �1 tablespoon flour
1 tablespoon sugar
300g chopped rhubarb
450g strawberries halved
250g cups white sugar
half of tablespoon cornflour
1 lemon (zest solely grated)
1 egg

Preheat oven to 220’c
Line the pie dish with the pastry
Mix 1tbsp of flour and 1tbsp sugar and half of tbsp cornflour and sprinkle in backside of pastry crust
In a big bowl mix the strawberries rhubarb, sugar and lemon zest
Gently stir till mixed and pour into the pie base.
With the remaining pastry reduce into strips and make a lattice on the highest of the pie.
Beat the egg and brush the lattice work and edges of the pie.
Bake on the underside rack of the oven for 15 minutes then cut back the oven temperature to 180’c and proceed to bake for 40 to 45 minutes till the filling all bubbly and the crust golden
Raise out and permit to chill
