Fast Rooster, chickpea & lentil Dhal curry
This fast and straightforward recipe provides you a one pot curry in 30 minutes …. nice for whenever you desire a tasty meal in restricted time .
2 rooster breasts
A bit of vegetable oil
1 sweetpoint pepper, sliced
2 carrots, small diced
2 medium onions, giant diced
5 small tomatoes
2 garlic cloves, crushed or 1 tsp garlic powder
1 400ml tin of chickpeas, drained
1400ml tin of lentils,drained
150ml rooster inventory
150ml coconut milk
three tsps of medium curry powder
Pinch of chilli flakes
Recent mint leaves, good handful
In your one pot add the oil, on a medium warmth add the onions, carrots, peppers and garlic, gently fry stirring often for five minutes.
Add the curry powder and chilli flakes and prepare dinner out for 1 minute, then add the inventory and coconut milk, stir and switch up warmth till you get a a simmer.
Add the chickpeas and lentils.
Take your rooster breasts and bash out between greaseproof paper till you get a fair escalope approx 1cm thick.
Add the rooster breasts to the one pot, place lid on and simmer for 20 minutes till rooster has cooked via, I flip the rooster after 10 minutes.
Lastly reduce your small tomatoes in half and add for ultimate 5 minutes of cooking with lid eliminated …. in case your sauce to skinny at this stage, thicken with just a little cornflour/water combination.
After 30 minutes add chopped recent mint leaves.
Both serve with rice or naan or each …..
