Hen with spicy lentils
2 hen breasts
1 medium carrot, diced small
1 medium onion diced small
1 medium leek diced small
1 stick celery diced small
1 clove garlic
half tsp chilli flakes
half tsp scorching paprika
150 ml white wine
300 ml of hen inventory
1 400g tin of lentils
Contemporary herbs, I used chives and mint
In a casserole pan on medium warmth, add the oil and all of the diced greens, sauté for five minutes, add the garlic, chilli flakes and paprika, stir for 1 minute then add the wine.
Simmer till wine diminished by half add the hen inventory and lentils.
Place hen breasts in pan, put lid on and switch to oven at 180’c for 20 minutes or till hen cooked via.
Take away from oven and add contemporary herbs.
Raise out hen and plate, stir lentils and plate alongside hen
